Description

Melt-in-your-mouth Crock Pot Chuck Roast cooked low and slow for tender, juicy beef and rich gravy. This cozy slow cooker dinner uses simple ingredients and delivers comforting, fall-apart flavor perfect for family meals and Sunday dinners.


Ingredients

34 lb chuck roast

1 tbsp salt

1 tsp black pepper

1 tbsp olive oil (for searing)

4 carrots, cut into chunks

1 lb baby potatoes

1 onion, sliced

1 cup beef broth

1 tbsp Worcestershire sauce

4 garlic cloves, smashed

1 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

Optional: 1 bay leaf

Optional Gravy: 1 tbsp cornstarch + 2 tbsp water


Instructions

1. Season the chuck roast generously with salt and pepper. Heat olive oil in a skillet and sear the roast for 3–4 minutes per side until deeply browned.

2. Place onions, carrots, and potatoes in the bottom of the slow cooker.

3. Set the seared roast on top of the vegetables and add garlic, thyme, rosemary, tomato paste, Worcestershire sauce, and bay leaf if using.

4. Pour beef broth around the roast, not directly over it.

5. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender.

6. Remove roast and vegetables. For gravy, whisk cornstarch slurry into the cooking liquid and simmer until thickened.

7. Slice or shred the roast and serve with vegetables and warm gravy.

Notes

Searing the roast adds deep flavor but can be skipped if needed.

Always cook chuck roast low and slow for the most tender result.

Cut vegetables into large chunks to prevent overcooking.

Let the roast rest a few minutes before slicing for best texture.
