Description

Classic Chicken Marsala with mushrooms and a glossy marsala wine sauce. This cozy Italian-American skillet dinner delivers tender chicken, rich flavor, and restaurant-style comfort perfect for weeknights or special occasions.


Ingredients

2 large boneless chicken breasts (sliced into cutlets)

Salt and black pepper, to taste

2 tbsp all-purpose flour (for light dredging)

2 tbsp olive oil

2 tbsp butter

8 oz mushrooms, sliced

3 garlic cloves, minced

3/4 cup marsala wine

1/2 cup chicken broth

1/2 tsp paprika (optional)

Fresh parsley, chopped (for garnish)

Optional: 1/4 cup mascarpone or cream for a richer sauce


Instructions

1. Slice chicken breasts horizontally to create thin cutlets. Season both sides with salt and pepper, then lightly dredge in flour.

2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add chicken and cook until golden on both sides. Remove and set aside.

3. In the same skillet, add mushrooms and sauté until browned. Stir in garlic and cook until fragrant.

4. Pour in marsala wine and let it simmer for several minutes to reduce slightly.

5. Add chicken broth and continue simmering until the sauce thickens.

6. Return chicken to the pan and cook gently in the sauce until fully heated through and tender.

7. Swirl in remaining butter for a glossy finish. Garnish with parsley and serve.

Notes

For a lighter version, skip the cream and let the wine reduction shine.

Allow the marsala wine to reduce properly for the best depth of flavor.

If the sauce feels thin, simmer a few extra minutes before adding the chicken back.

Chicken marsala tastes even better the next day as flavors deepen.
