Ingredients
1 lb chicken breast, thighs, or ground chicken
2 cups shredded cabbage or coleslaw mix
1 cup shredded carrots
1/2 cup sliced cucumber
1/2 red bell pepper, sliced
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
Optional base: cooked rice, quinoa, cauliflower rice, or greens
Bang Bang Sauce:
1/3 cup mayonnaise or Greek yogurt
2 tbsp sweet chili sauce
1 tsp sriracha (adjust to taste)
1 tsp lime juice or rice vinegar
Instructions
1. Prepare the bang bang sauce by whisking mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl. Set aside.
2. Heat olive oil in a skillet over medium heat. Add chicken and season with garlic powder, paprika, salt, and pepper.
3. Cook chicken until fully cooked and lightly browned, breaking it up if using ground chicken.
4. Arrange your base in a bowl if using, then add cooked chicken and fresh vegetables.
5. Drizzle generously with bang bang sauce and serve warm.
Notes
For meal prep, store chicken, vegetables, and sauce separately and assemble when ready to eat.
Use Greek yogurt instead of mayo for a lighter, higher-protein version.
